- Artichoke: 4 grains (fresh)
- Lemon juice: A tablespoon
- Onions: 1 grain (chopped)
- Chicken broth: 4 cups
- Olive oil: 2 tablespoons
- Butter: 20 grams
- Cream: cup (fresh)
- Goat Cheese: 200 g
- Toast: 2 pieces
- Salt : Pinch
- Black pepper: as desired
How to prepare
Wash the artichokes thoroughly, cut their hearts into small pieces and place in a saucepan, then add the lemon juice.
Toast the bread well until golden in color, cut the edges, until it becomes round. Then place the goat cheese on top.
In a saucepan, put the butter, onionand artichokes, stirring well, but without browning.
Add chicken stock or vegetables in a saucepan, and simmer. Then, place in an electric mixer, with artichokes.
Return the mixture to the pot, add the fresh cream to it, and simmer for 5 minutes, then add salt and pepper to taste.
Meanwhile, roast goat cheese with toast in the oven.
The soup is whisked with a hand whisk.
Serving method: Place the artichokes and onions in the middle of the serving dish, topped with toast, and then pour the soup around. Fresh artichokes can be replaced by freezer.
